A father-son bond is a difficult one to break. For local taco truck owner/chef, Jesse Schabacker, and his son, Jesse Schabacker (different middle name than his dad’s), that’s been the case for them since the younger Schabacker was 17 and started working with the older Schabacker at the Copper Queen Hotel.
Still side-by-side, they now run Pop’s Tacos, located at 316 Pirrung Avenue (outside of the Hitching Post Saloon), which is aptly named as a nod to their dad/granddad. “My dad – who I called ‘pop’ – helped me with the idea,” said the older Schabacker. “Unfortunately, he died two years ago.” The business will continue to be a tribute to him.
The older Schabacker was born in Banos, Equador and moved to Bisbee when he was 3. He has been in the area most of his life – with only a four-year break when he went to college at Northern Arizona University to study construction management. He left school just shy of getting his degree after an opportunity too good to pass up came along – opening his own cabinet shop back home in Bisbee (Lowell).
